I'm really excited for this long weekend! I don't even have to work Sunday so that means as soon as noon tomorrow hits I don't have to be anywhere or do anything until Tuesday at 1:00!
Of course, there are all the things I should do this weekend, like... laundry, shopping, spend some time in the darkrooms if they're open, start shooting for the gallery, read (A LOT), work on my portfolio stuff and maybe shoot some more for that... and the list goes on.
So, while I will try to get some of that stuff accomplished over my basically-4-day weekend, I also plan on cooking like crazy! I feel like I've barely gotten a good meal that I could enjoy all week, except last night.
Last night I made Spanish rice adapted from Mom's "recipe". I diced up some purple onion and green pepper and sauteed them up a bit and then added some griller crumbles. When all that started to brown a bit I took it out of the pan and cooked the rice. Then I added the onion/pepper/crumble mix in along with some corn, black beans, and diced tomatoes. Hello yumminess! I also made some corn muffins (from a mix). I took some to Hannah at work because she was working til 9 and didn't have a way of getting food.
After my supper delivery I went to Hardings and grabbed a few things I needed to make chocolate chip cookie dough cheesecake bars. I took those into work today and they were almost as good as the first time I made them.
So, being home with the dogs and Spice this weekend I'm planning on eating well! Tomorrow night I'm going to make pizza with a side of tortilla chips and homemade guacamole. Sabbath lunch will be homemade baked mac & cheese (I think) and asparagus. And then one of the days I might try my hand at sushi or some other Asian meal. I might make some blueberry muffins too... oh the options!
Yay for long weekends!
